Jam pikelets sandwich

Ingredients (makes 6-8):

  • 1 egg
  • 1/4 cup sugar
  • 3/4 cup milk of your choice
  • 1 cup of flour
  • 2 tsp baking powder

Method:

  1. In a glass or metal bowl whisk the egg and sugar together. Add the milk and mix till combined.
  2. Add the flour and baking powder, mix until well combined.
  3. Heat a lightly greased non stick frying pan over medium heat. Using a 1/4 cup measure, spoon some mixture into the pan to obtain an 8-10 diameter disk. Cook until the mixture is bubbling and the underside is golden brown. Flip with an egg lifter and cook until golden brown.
  4. Spread jam on one pikelet and top with a second one.
  5. Wrap in tin foil or place in a zip lock bag for convenience.
