Pumpkin and Carrot Loaf

Delicious and nutritious, this loaf is super tasty, easy to make and a great snack option.

Ingredients:

1 1/2 cups of wholemeal self-raising flourn1/2 cup quinoa flakesn1/4 cup firmly packed brown sugarn1 tsp ground turmericn1/2 tsp ground mixed spicen1cup grated carrotn1 cup grated pumpkinn1 green apple gratedn2 eggsn1/3 cup reduced-fat milkn1/3 cup canola oiln1tsp vanilla extractn2tbsp pepitas

Method:

1. Preheat oven to 180C, grease and line loaf tin.

2. Combine dry ingredients in large bowl. Whisk eggs, milk, oil and vanilla in a small bowl.

3. Stir into flour mixture and spoon into tin. Place pepitas on top and bake for 50-55 minutes.

4. Cool for 5 minutes before transferring to wire rack. Enjoy!
